Study overview
Biofortification aims to address zinc deficiency by breeding staple crops with higher micronutrient content, but adoption depends on consumer acceptance. This study characterized grain quality — including grain length, length-breadth ratio, and endosperm chalkiness, measured with a Vibe QM3 image analyzer — and sensory acceptability of zinc-biofortified rice varieties alongside local controls in Bolivia and Colombia. Sensory acceptability was evaluated in 243 adults using a 7-point hedonic scale. In Bolivia, biofortified variety T2-11 and the control were equally accepted with no significant difference; in Colombia, biofortified variety 035 scored higher in overall acceptance than the other biofortified variety and the local control, supporting the viability of zinc-biofortified rice for wider adoption.
